Speaker: Conall Smith and Chef Anthony Campagna
Conall :On our first stop on Aramark's 250 Taste Tour, we're here in South Philadelphia at Xfinity Mobile Arena where our chefs are just as passionate as the fans they serve. I'm here at Xfinity Mobile Arena where I'm about to introduce you to a special guest to talk about their in-house dough program. Come on in, Chef Cuz!
Anthony: Hey, how are you? Welcome to XMA. How are you today?
Conall: I'm fantastic, glad to be here.
Anthony: Oh, glad to have you!
Conall: Yeah, thank you for having us.
Awesome stuff right in front of us. We have some pizza, some pretzels, and this is all unique to XMA, right?
Anthony: Yes, it is. So about 10 years ago, we started our own in-house dough program, which is extremely unique in this kind of environment. From pizza dough to taglio dough to focaccia dough, different sizes all over the building. It brings a uniqueness that not too many places can match. This year, we wanted to level it up by having our own pretzels. It's Philadelphia—we wanted to celebrate Philly, so we decided why not, right? So we did our own pretzel, and we didn't stop there: we infused it with beer. So the pretzel has so many complex flavors, it's just really a unique item to sell in an arena.
Conall: Well, Chef, I think it's time to dig in. I'm selfishly going to have the whole slice of pizza myself, but you want to share the pretzel?
Anthony: Yeah, of course!
Conall: All right, let's go for it.
That is so good, so fresh! Pizza is one of my favorite things, so right on the mark, it's great.
Anthony: Next time you're back at XMA, whether you're on club level or you're on the main concourse, get yourself a whole pie, you'll love it.
Conall: I might have to just do that!
Anthony: Of course.
Conall: All right, you want to split the pretzels?
Anthony: Yeah, of course, let me go for it. Taste that—taste that yeast and airiness and beer.
Conall: That's so light and fluffy. The salt's a nice touch, this is incredible.
Anthony: Yeah, of course.
Conall: You can't come to Philly without having a cheesesteak, but the team here at Xfinity Mobile Arena really takes it up a notch with the South Street Chicken Cheesesteak, featuring double-smoked chicken, fried caramelized onion marmalade, gooey Gouda Whiz, all on a seeded roll. Let me take a bite.
You can really taste the smokiness. The smoked Gouda is a nice touch, fried onion marmalade—this is hands down an amazing cheesesteak. This Philly-centric menu rollout is part of Aramark's celebration of America's 250th anniversary, and whether you're catching a concert or a game, you don't want to miss this food!
