"Let's make some tomato butter. Hey everybody, it's Chef Alec. Tomatoes are in their peak right now, but I wanna show you a way to preserve them so you can enjoy tomato season year round.

All we're gonna do to start is take a little bit of butter, some tomato paste, and our beautiful peak season heirloom tomatoes, and put them all together in a pot. Now we're just gonna stir these around until everything is melted.

So our tomatoes are starting to break down and this is starting to get creamy and beautiful. Now I love this dish because you can save this butter in the freezer and pop it out year round whenever you wanna use it.

All right, our tomatoes are fully broken down and our mixture is beautiful and creamy. Now we're just gonna puree this in a food processor or a blender and add it to softened butter in a stand mixer. Here we go, some fresh, vibrant tomato butter.

So here are two of my favorite ways to enjoy this butter. You can either just spread it on a nice toasted crusty baguette, or use it as the star of this five-ingredient pasta. With this butter, no matter what season it is outside, it can always be tomato season in your house."
