Recipe: Seasonal Syrups

"Hey everybody, it's Chef Alec. The holidays are here! Whether it's hot cocoa or a cocktail, here are some shockingly simple syrups to help spruce up any beverage.
So today, we have a pumpkin spice syrup, a peppermint syrup, and a spicy maple syrup. Now, let's show you how to make them!
So, we're going to start by making a simple syrup base, which is just equal parts of water and sugar. Now, we're just going to whisk that together and heat until it's clear.
Just going to add some crushed candy canes to it, then just stir that in until it dissolves. Should only take a couple of minutes. As you can see, it's all dissolved, and look at that fun red color! Now, all you have to do is let this cool, and it's ready to use.
So for the pumpkin spice syrup, we're going to start off the same way we did last time by making our simple syrup. And this time, we're going to add some pumpkin spice to it. You can buy pre-made pumpkin spice or you can make your own—it's just cinnamon, clove, allspice, and ginger right into the bowl. Once again, we're just going to mix that until it is all incorporated and then just cook it until it's slightly translucent. That smells so good! And as you can see, we're just about done.
Now, finally, we're going to go on to our spicy maple one. This one is the easiest of them all. We just took some high-quality maple syrup, diluted it with just a little bit of water, and tossed in some nice chilies. Now, you can add as much or as little chilies as you want depending on your spice tolerance, and we just let it sit overnight and it's ready to use.
