Recipe: Breakfast Pizza Pinwheels

"Hey everybody, it's Chef Alec. We are back in the Aramark kitchen and today we're going to feature the newest limited-time offer coming from the innovation team here at Aramark: it is a breakfast pizza pinwheel! Now, if you're anything like me, you love pizza for breakfast, and this is a great way to enjoy it while still having all your classic breakfast flavors right in there.
So we're going to start off with 2 oz of ketchup. We're just going to spread it nice and evenly over the whole dough. Now this is just a standard 16 oz pizza dough that we spread out to approximately 16 by 16 inches. We're going to take a nice spreader, get a good even spread across here.
Then we're going to go in with 8 oz of scrambled eggs. Once again, you're going to want to get everything nice and evenly spread across the dough. After that, it's 8 oz of your favorite shredded cheese. You can really do anything you want—we're doing a mozzarella and cheddar mix. Now we add 6 oz of cooked, crumbled bacon. Now this will come in several varieties of different breakfast meats, so if you don't like bacon, that's okay, we'll have other stuff for you. And then 4 oz of sliced scallion.
Now that all of your ingredients are in there, we're just going to roll it up just like a classic cinnamon roll. Beautiful! How easy is that? Now take our knife, we're going to trim off the edge, and we're going to cut it into 2-inch segments.
Once we have our pinwheels, we're going to place them in a pre-greased jumbo muffin pan and we're going to let them sit at room temperature to proof for 20 minutes. Now one of the great things about this is that you can make them the night before—you can refrigerate them for up to 24 hours and then just pull them out 20 minutes before you're ready to bake, let them proof up a little bit, and breakfast is done.
The last thing we do is take a little bit of melted butter, give all of them a brush, and then right into a 325° oven for about 18 minutes until golden brown.
All right, our pinwheels are out of the oven. They look fantastic! I'm going to enjoy one of these right now, and I know you guys are going to enjoy them, too!"
