Tomato Butter

With heirloom tomatoes at their peak, one chef has a way to make the season last: a simple tomato butter, made from just a few ingredients, that can be spread on bread, stirred into pasta, or saved for months after tomato season ends.

Ingredients

For the tomato puree:

  • 3 pints heirloom cherry tomatoes
  • 3 tablespoons butter
  • 3 tablespoons tomato paste

To finish:

  • 1 pound (4 sticks) unsalted butter, softened

Instructions

  1. Combine and cook down: In a pot, add the 3 tablespoons of butter, tomato paste, and heirloom cherry tomatoes together. Stir until the butter is fully melted and everything starts to combine.
  2. Simmer until broken down: Keep stirring occasionally as the tomatoes break down and the mixture turns creamy and beautiful. Cook until the tomatoes are fully broken down.
  3. Puree: Transfer the cooked tomato mixture to a food processor or blender and puree until smooth.
  4. Mix into butter: Add the puree to softened butter in a stand mixer and blend until you have a smooth, vibrant tomato butter.
