A guaranteed bracket buster! Chef Alec keeps it "Shockingly Simple" with this crowd‑favorite Reuben Dip.

Ingredients:
- 1/2 pound of chopped of pastrami (or corned beef)
- 1 to 2 cups of shredded or cubed swiss cheese
- 1/2 to 1 cup of sauerkraut (drained well)
- 1/4 to 1/2 cup of Russian or Thousand Island Dressing
- 1/4 to 1/2 cup of sour cream
- Rye breadcrumbs (enough to generously cover the top of your baking dish)
Instructions:
- Mix the Base: In a large bowl, combine the Swiss cheese, sauerkraut, pastrami, Russian dressing, and sour cream. Use a rubber spatula to mix until all ingredients are thoroughly incorporated.
- Transfer to Dish: Spread the mixture evenly into an oven-safe baking dish.
- Add Topping: Generously top the mixture with the rye breadcrumbs.
- Bake: Cover the dish with foil and bake in a preheated 350°F (175°C) oven for 20 minutes. Remove the foil and bake for an additional 10 minutes to crisp up the topping.
- Serve: Let it cool slightly and serve as a warm dip with crackers or chips.
