An inside look at the people and preparation behind Aramark’s game-day food and beverage operation at one of baseball’s most iconic ballparks.
What does it take to feed nearly 37,000 baseball fans in a matter of hours? Food & Wine recently went behind the scenes at Fenway Park to find out, following Aramark teams as they prepared for game day at Major League Baseball’s oldest ballpark. From thousands of Fenway Franks and homemade desserts to produce harvested from the ballpark’s rooftop garden, the video offers a rare look at the planning, teamwork, and execution behind the fan experience.
Feeding Fenway at Scale
Long before first pitch, Aramark teams are preparing to serve approximately 37,000 fans across concession stands, restaurants, and premium spaces throughout Fenway Park. On a typical game day, that means delivering a wide range of food and beverage experiences, from ballpark classics to chef-driven menu items and elevated hospitality offerings. Delivering that volume requires coordination across the venue, from receiving and distributing food to preparing ingredients, stocking concession stands, and replenishing inventory throughout the game. The goal is not only to serve thousands of guests efficiently but also to deliver quality and consistency at every touchpoint.
Freshness at the Center of the Experience
Food & Wine follows Fenway's culinary team into the kitchens, where chefs prepare ingredients and pastry teams make desserts hours before the fans arrive. That same commitment extends to Fenway's premium spaces, where chefs work to create restaurant-quality dining experiences within the pace and complexity of a live sporting event.
“I want them to experience something that they can’t go and get at another ballpark”—Chef Ron Abell.
From Rooftop Garden to Plate
Some of Fenway's freshest ingredients come from Fenway Farms, the rooftop garden located inside the ballpark. The team carefully plans growth and harvest schedules to maximize quality and yield, with produce making its way directly from the rooftop to menus throughout the venue.
A Modern Operation Inside a Historic Ballpark
Executing all of this inside a venue that opened in 1912 presents unique challenges. Limited space, constrained storage areas, and the logistics of moving food throughout a packed ballpark require careful planning.
Aramark teams use historical gameday data to anticipate demand, position inventory throughout the venue, and prepare for the rush before gates open. Once the game begins, teams shift into a continuous rhythm of serving guests, replenishing supplies, and adapting in real time. Behind every hot dog, dessert, and premium dining experience are the chefs, cooks, warehouse teams, concessions employees, and many others whose work helps make game day possible.
