Aramark is expanding its partnership with renowned chef, author, and television personality Chef Grace Ramirez, unveiling an enhanced version of the La Latina Cocina concept across its residential dining programs, featuring a vibrant new menu that celebrates Latin cuisine.
"I’m thrilled to continue this partnership that is so close to my heart,” said Chef Grace Ramirez. “These are family recipes, rooted in love and tradition, and my hope is that every student feels at home when they enjoy them—nurtured, cared for, and connected through the flavors of our culture."
Recent insights from Aramark Collegiate Hospitality surveys reveal 67% of Gen Z students prefer authentic, international flavors, according to Theresa Butler, Vice President of Student Experience. La Latina Cocina was developed in close collaboration with Chef Grace and Aramark’s culinary innovation team to meet that growing demand for culturally authentic dining experiences. Once launched, 90% of students surveyed expressed they are likely to order again and recommend La Latina Cocina to a friend or colleague.
The expanded menu builds on previous menus while introducing a variety of new signature dishes, sides, and desserts inspired by flavors from across Latin America.
New Signature Dishes, Sides, and Desserts:
- Turkey Picadillo: A savory blend of ground turkey slow simmered with garlic, onions, and bell peppers in a rich tomato base, finished with raisins and olives.
- Turkey Picadillo Bowl: Seasoned rice layered with turkey picadillo, golden fried plantains, and a cilantro-onion garnish.
- Pork Al Pastor: Pork shoulder marinated in a smoky-sweet blend of spices and pineapple, then slow-cooked until tender.
- Pork Al Pastor Bowl: A hearty bowl featuring tender pork al pastor paired with roasted guajillo-spiced cauliflower and caramelized pineapple.
- Chimichurri Chicken: Grilled chicken marinated in a zesty chimichurri of fresh herbs, garlic, and spices.
- Chimichurri Chicken Plate: Chimichurri chicken served alongside maple-roasted sweet potatoes, tangy pickled red onions, and fresh cilantro.
- Pinto Bean Chili: A slow-simmered chili with tender pinto beans, tomatoes, onions, celery, carrots, and garlic, seasoned with an aromatic spice blend.
- Pinto Bean Chili Bowl: Creamy seasoned rice topped with pinto bean chili, finished with crumbles of queso fresco and tangy pickled onions.
- Guajillo Cauliflower: Oven-roasted cauliflower tossed in smoky guajillo chili, fresh cilantro, and spices.
- Jalapeño Roasted Butternut Squash: Sweet, tender squash roasted with garlic and jalapeño, tossed with fresh spinach and garbanzo beans.
- Maple Roasted Sweet Potatoes: Caramelized sweet potatoes roasted until golden, drizzled with maple syrup, and finished with pumpkin seeds, queso, and fresh cilantro.
- Flan: A silky custard infused with coconut, topped with a layer of golden caramel.

Guests can also enjoy a “Create Your Own” experience, customizing bowls, tacos, and plates with a variety of bases, proteins, toppings, and sauces.
