Food Trucks Add Flavor and Flexibility to Campus Dining with Aramark Collegiate Hospitality

College campuses nationwide are embracing food trucks as dynamic dining solutions, offering students fast, flavorful meals between classes. Aramark Collegiate Hospitality is driving the trend forward, rolling out a mix of food truck concepts—from permanent installations to mobile units that rotate across campus locations. Operated either directly by Aramark Collegiate Hospitality or in collaboration with local vendors, these trucks bring variety, convenience, and culinary creativity to students, meeting them where they are and keeping pace with their busy routines.

University of Delaware: The Rolling Rooster

The Rolling Rooster made its debut on the University of Delaware's campus on October 13th, bringing a fresh and premium upgrade to on-campus dining. The food truck features five rotating menu concepts, offering students a variety of high-quality options from comfort food to global flavors: Specialty tacos, Dippin’ Melts, Shakshuka Bowl, Brunch, and seafood. Its elevated offerings are designed to enhance the dining experience while maintaining convenience and value.

Strategically located in areas of campus where students gather, the Rolling Rooster aims to bring food to UD students where they are and ensure they have easy access to delicious meals. Its mobility and diverse menu make it a standout addition to UD’s dining program, reinforcing a commitment to innovation and community.

Cleveland State University: The Longship

The Longship at Cleveland State University serves handheld favorites throughout the week on campus as well as participating in events and festivals throughout Cleveland in the summer and on weekends. The food truck's primary location is outside CSU's College of Law, Monday–Friday, from 11 a.m.–3 p.m. 

Menu Highlights:

  • Cleveland Polish Boy
  • Gyro Boy
  • Tenders and Fries (a student favorite)

The Longship also participates in Downtown Cleveland events and is available for private bookings via Street Food Finder.

University of North Carolina Wilmington (UNCW)

The University of North Carolina Wilmington boasts a variety of dining options through 20 food trucks located across campus. Students can find everything from burgers, barbecue, wings, and tater tots from UNCW's own Seahawk Wagon, to Venezuelan arepas, complemented by açaí bowls, smoothies, shakes, ice cream, and coffee. Plant-based options are also available for students on campus to meet all dietary needs. 

Food trucks at UNCW operate at three campus locations on a rotating weekly schedule, providing flexibility and variety for students. These food trucks not only provide a variety of meals but also enhance UNCW’s special events, concessions, dining hall pop-ups, and food truck rodeos, fostering a strong sense of community among students. Multiple payment options, including UNCW Food Dollars, help make these offerings accessible to all students.

Fairfield University: Food Truck Village

At Fairfield University in Connecticut, Stags Hospitality presents the Food Truck Village, a six-day-a-week destination featuring four trucks and a rotating lineup. Students can enjoy an entrée and bottled water for a meal swipe at each location.

  • Featured Trucks:
    • Fairfield Rice Co.: The newest addition, serving dumplings and General Tso’s rice bowls.
    • Zuppardi’s Apizza: Personal New Haven–style pizzas.
    • Taste of Culinary Cuisine: A woman-owned truck offering a wide variety of dishes as well as provides concessions during Fairfield Men’s Soccer games.
    • Chef Art Smith’s Varsity Bird: Signature chicken sandwiches from celebrity chef Art Smith.
    • Rotating Lineup (Monday–Thursday): Includes local favorites such as The Blind Rhino, Fork in the Road, Taste of Grill, and Liberty Rock Tavern.

The College of William & Mary

Students attending William & Mary can explore global street food through weekly rotating food trucks including these student favorites:

  • Amma’s Curry in a Hurry: Indian cuisine featuring Lamb Saagwala, Tandoori Wings, Biryani, and fusion burritos. Amma’s Curry in a Hurry is dedicated to bringing authentic Indian Cultural food to campus. 
  • Vivi’s Burritos: Latin fusion food truck with a focus on modern street tacos, generous burritos, small plates, and signature mocktails.
