Aramark, in partnership with Howard University, hosted renowned culinary ambassador and New York Times bestselling author Dr. Jessica B. Harris for a special event—Beyond the Plate Educational Session—celebrating the rich culinary traditions of the African Diaspora.
Held at The Forum and Blackburn Café on Howard University’s campus, the event featured a lecture, book signing, and a curated culinary tasting inspired by Dr. Harris’s work. Students, faculty, and guests gathered to explore the deep-rooted culinary influences of Africa. This educational event is a continuation of Aramark’s focus on discussing the significance of various foods that have influenced “America’s Table.”
"The event highlighted the richness and cultural significance of culinary influences across the global diaspora," says Rashad Young, Howard University Senior Vice President & Chief Administrative Officer. "The University wants to ensure these events are an important part of students' dining experiences."
Dr. Harris discussed her years of research tracing the African Diaspora in food and shared insights into the enduring influence of African ingredients as well as the evolution of soul food in America. A captivating storyteller, Dr. Harris traced the foods and foodways that began in Africa, traversed the Atlantic slave ship routes, and eventually spread across the American continent. She also explained how current day beloved foods became part of America's inclusive table.
“I’m delighted to be able to share with Howard students some tales and recipes that will demonstrate some of the ways that the African continent and the United States are connected on the plate,” said Dr. Harris.
High on the Hog, which inspired the acclaimed Peabody Award-winning Netflix series, was available to have Dr. Harris sign, and the tasting was open to students and guests of the educational session. The event builds on Dr. Harris’s previous collaboration with Aramark through the Beyond the Plate educational series, which explores the influence of African ingredients and traditions on American cuisine.
Dr. Harris is the author of 18 books, including 12 cookbooks, and was named one of TIME Magazine’s most influential people. She is a James Beard Lifetime Achievement awardee and professor emerita at Queens College.
