Mark This! Episode 14: Eat to Excel

Aramark Collegiate Hospitality has a brand-new program—Eat to Excel. Eat to Excel is a performance-based dining platform designed to help student athletes reach for their potential on and off the field. Created with Division II and III athletes in mind, Eat to ExcelTM provides an educational, menu and nutrition tracking solution on campuses that do not have dedicated training tables for student athletes.

Kelli Sheehan, Director of Business Development, Collegiate Hospitality

Kelli began her career in the tradeshow and event industry working in account management and sales with many food industry clients like Kraft Foods, Organic Valley and Hodgson Mill. During this time she obtained her EMBA through Loyola University Chicago in international executive management. She used her sales and MBA skills to begin the global division of her company. Kelli built a partner network across six continents, while selling and managing both domestic and global client programs. Eventually, she made the transition from sales to operations. As the EVP, Operations, she lead a team of 50+ across production, warehouse, transportation, client services and HR. 

Realizing that  relationships and problem-solving is where her passion lies, she joined Aramark Collegiate Hospitality as Director, Business Development for the Midwest region. Kelli focuses on building relationships with potential clients and leading an internal team to develop solutions that fit each institution’s unique needs. Her goal is to build mutually beneficial partnerships that benefit both our client and Aramark. 

 

Kaiten Zajac, Senior Manager of Nutrition, Collegiate Hospitality

Kaiten Zajac graduated from The University of Texas with a Bachelor of Science in Nutrition and Dietetics. Her passion for collegiate hospitality began here as a student dietitian’s assistant with housing and dining. She went on to complete her dietetic internship with Abilene Christian University where she completed 1,400 hours of supervised practice in food service operations, medical nutrition therapy, and community nutrition with a special population focus on those of low socioeconomic status. Recently, she graduated with distinction from Arizona State University with her Master of Science in Nutrition and Dietetics. 

Kaiten joined Aramark in 2018 in Collegiate Hospitality, where she spearheaded the health and wellness program at Auburn University and helped to create an award-winning, inclusive dining environment that supports students with food allergies and other dietary restrictions. She now supports the Mid-West Region, expanding health and wellness initiatives and creating comprehensive dining experiences for students across multiple campuses. 

 

Dan Wainfan, Vice President for Health, Wellness, & Nutrition

As Vice President - Health, Wellness & Nutrition, Dan leads creation and activation of Aramark’s industry-leading consumer health and wellbeing programs, practices, and partnerships.

In this role, Dan leads cross-functional teams that develop and deploy health and wellness related marketing, promotional and operating programs, field training and support tools, enabling systems and technologies. Dan also oversees Aramark's health focused digital & social media channels, providing health insights and ideas from the companies 1,000+ chefs and 750+ dietitians and health partners.

Prior to this role Dan held various leadership positions in the consumer products industry with more than 20 years in food industry experience in brand management, product & program development and consumer marketing.
