The essential goal for dining amenities within a manufacturing facility is ordinarily straight forward: provide high quality meals, quickly, and consistently for every shift. However, not all manufacturing sites are created equal. Every location poses their own unique operational challenge.
At a downtown manufacturing plant in Western New York, our team was presented with one of their most unique operational challenges yet, a large workforce, with an under-equipped kitchen to support its growing needs.
Our team expertly identified the equipment, programming, labor model, and build out schedule needed to redesign the space into a fully functional commercial kitchen, one built to produce in high volumes, move fast during service, and still deliver a great guest experience.
Given the rural location, our team even took into account such nuances as seasonal weather patterns that could impede vendor deliveries, and support resources.

Now a successful P&L operation, capturing over 70% daily participation average, our client is considering future opportunities to expand the model into their portfolio of locations.
Designing a Cafeteria Without a Kitchen
Workplace Hospitality treated this as a design problem first. A full kitchen depends on a hood ventilation system to manage heat, smoke, and grease, and that system is the single most expensive part of a food-service build. Hot food is a non-negotiable for any manufacturing location, so our design approach had to be creative.
The solution centered on ventless equipment: cooking equipment that runs without a hood ventilation system, so full hot-food production could go into a building that could never support a traditional kitchen. Two rapid-cook ovens handle breakfast and the snack period, where speed matters most. A ventless combi oven anchors lunch and cooks sous vide, sealed in the bag, within standard food-safety rules. Induction rethermalizing units cover soup service without adding any cooking equipment or electrical load. The result is a clean, predictable cooking footprint inside a standard floor plan, with no ventilation infrastructure necessary.
A self-serve design is what makes the program work within the workforce's lunch budgets. About 90 percent of the program runs without staffed stations, which keeps labor cost low and customer price points attractive.
The menu is built for speed: grab-and-go options, one composed entree made fresh daily, and a guest restaurant partner featured each week, so there is real variety and a reason to keep coming back. The labor model was built with plant management, scoped to the existing break schedules and shift structure.
The results
The site runs P&L positive with no subsidy backstop and posts a 70 percent participation rate across its three daily service moments, roughly seven in ten employees eating on site.
In a recent quarterly business review, the clients noted our cafe was voted: “Consistently the best cafeteria in North America.”
Our success with the cafe opened a new scope of opportunities within our client's workspace. The pantry and amenities contract followed, covering bulk snacks, coffee service, and a free-food program. Other plants in the client's network have asked about bringing Workplace Hospitality into their operations, and the next planned expansion is to incorporate a deli concept into the cafe.
