A Conversation and Cooking Demonstration with Maya Feller

Aramark’s Workplace Experience Group is thrilled to announce our partnership with Maya Feller, MS, RD, CDN, of Brooklyn-based Maya Feller Nutrition, and nationally recognized registered dietitian nutritionist.

Maya Feller earned her Master of Science in Clinical Nutrition at New York University. She shares her approachable, real-food-based solutions through regular speaking engagements, contributions to local and national publications, and as a nutrition expert on Good Morning America.

Shannon Nichols, Vice President of Operations for Aramark Refreshments, met with Maya to discuss her experiences as a nutritionist and to participate in a cooking demonstration featuring a delicious recipe from Maya’s cookbook, Eating From Our Roots. Throughout the demonstration, Maya and Shannon explore the connection between food, culture, and the importance of inclusive nutrition.

In a discussion with Shannon, Maya expressed how she’s sought ways to honor unique and different cultural dietary practices while helping individuals achieve better health outcomes. She said, I am a strong believer in not making cultural groups monolithic. To be Black in the Northeast of the United States is a very different cultural and flavor experience than being Black in the Southern part of the United States. To be Black in Central Africa and eat those foods is very different than being Black in the French-speaking Caribbean. Yes, that is the diaspora and flavors travel, however it is unique and not all the same.”

Eating From Our Roots, features more than 80 classic dishes from underrepresented American cultures, restoring them to their nourishing origins. Through her recipes, Maya highlights the power of nutrient-dense ingredients in elevating everyday meals. With a focus on whole and minimally processed ingredients, she offers thoughtful and flavor-enriched ways to rethink our relationship with food.  

Maya provides valuable insight into the nutritional benefits of plants in your diet and how to incorporate these elements into everyday meals while maintaining bold, authentic flavors.
